The Core Four Check ✓

Every Revel & Well recipe gets the Core Four Check — a quick look at how the plate covers the macro and micronutrients our bodies require daily.

Here's how this one stacks up:

Protein — Shawarma-spiced chicken thighs, pasture-raised — around 24g per 3 oz of clean, satisfying protein.

Fiber — The fresh salad — frisée, Persian cucumber, and tomato — for crunch and digestion.

Healthy Fat — The lemon-dill aioli (avocado oil mayo, no seed oils) plus briny kalamata olives.

Colorful Vegetables — Frisée, tomato, cucumber, olives, and fresh dill bring color and brightness.

Why I’m Obsessed With This Chicken

I use organic pasture-raised chicken thighs because they are consistently tender and juicy. They are also packed with protein—offering around 24 grams per 3-ounce serving—which is essential for muscle repair and energy.

The chicken's flavor comes from a shawarma-inspired spice blend that includes cumin, coriander, turmeric, cayenne, cinnamon, cardamom, and sumac. These spices not only provide a warm, rich taste but also have numerous health benefits. A quick 20-minute marination allows the rich flavors to soak in and enhance the chicken.

The Salad I Always Have On Hand

Don't skip the Zesty Lemon Dill Aioli! This simple, creamy sauce transforms any core four bowl.
Don't skip the Zesty Lemon Dill Aioli! This simple, creamy sauce transforms any core four bowl.

For my salad, I love a mix of frisée, cucumber, tomato, and Kalamata olives. These Greek salad staples are at the top of my grocery list because they combine to create a dish that is refreshing and bright.

The textures in this salad are delightful: crunchy frisée, juicy tomatoes, the crispness of cucumbers, and the briny flavor of olives. The vibrant colors make the bowl look stunning and appealing when it's time to dig in, adding a sense of excitement to your meal.

Don’t Skip the Aioli

What ties this entire dish together is the lemon dill aioli. This simple, creamy sauce transforms ordinary components into something extraordinary. Just avocado oil mayo, fresh lemon juice, garlic, and market fresh dill create a blend that’s creamy, tangy, and full of flavor.

This aioli is made with avocado oil mayo, so you skip the inflammatory seed oils and preservatives found in most store-bought versions—and still get that same creamy flavor with ingredients you actually feel good about. Trust me, your taste buds—as well as your health—will appreciate the difference.

Chicken Shawarma Bowl Recipe

Ingredients

For the Chicken:

  • 1/5 lb pasture-raised or organic chicken thighs

  • 1 tsp cumin

  • 1 tsp coriander

  • 1 tsp turmeric

  • ½ tsp cayenne pepper

  • ½ tsp cinnamon

  • ½ tsp cardamom

  • 1 tsp onion powder

  • Salt and pepper to taste

  • Avocado oil for cooking

For the Rice:

  • 1 cup regenerative jasmine or basmati rice

  • 1 ¾ cup water

  • 1 tbsp ghee or grass-fed butter

  • Pinch of sea salt

For the Salad:

  • 1 cup frisée lettuce, chopped

  • 1 Persian cucumber, diced

  • ½ tomatoes, halved

  • ½ cup Kalamata olives, pitted

For the Aioli:

  • ¼ cup avocado oil mayo

  • 3 tbsp lemon juice

  • 1 clove garlic, chopped

  • 2 tbsp fresh dill, chopped

  • 1 tsp turmeric

  • Salt to taste

How to Make It

  1. Marinate the Chicken: In a bowl, combine the chicken thighs with the spices, salt, and olive oil. Allow the chicken to marinate for at least 20 minutes for maximum flavor.

  2. Cook the Rice: In a medium pot, add the rice, butter, and a pinch of salt, and bring to a boil. Lower the heat, cover, and simmer for 15 minutes.

  3. Prepare the Salad: While the chicken and rice are cooking, toss together the frisée, cucumber, tomatoes, and olives in a large bowl. Set aside.

  4. Make the Aioli: In a small bowl, mix the avocado oil mayo, garlic, turmeric, lemon juice, dill, and a pinch of salt until creamy.

  5. Cook the Chicken: Heat a skillet over medium heat, add a little olive oil, and cook the marinated chicken for about 7 minutes on each side, until golden and cooked through to 165°F.

  6. Assemble the Bowl: Start with a base of rice, layer on the salad, plate the chicken, drizzle with the lemon dill aioli, and top with extra virgin olive oil and lemon juice.

  7. Enjoy It!: Dig in and savor each delicious bite!

FAQ

Can I make the components ahead?

Yes — marinate the chicken and whisk the aioli up to a day ahead, and cook the rice in advance. Assemble fresh. It's great for meal prep.

What can I use instead of frisée?

Any crisp green — romaine, little gem, or a handful of arugula all work beautifully.

Is it gluten-free?

Yes, it's rice-based — just check that your mayo is gluten-free.

No avocado oil mayo?

Any clean mayo works, or swap in Greek yogurt for a tangy, lighter aioli.

Is this Whole30 or paleo friendly?

Almost — as written it's gluten-free, but the rice keeps it from being strict Whole30 or paleo. Swap the rice for cauliflower rice and it's compliant on both.

This looks incredible. I'm going to have to make it sometime!

I have some questions, though. Under the picture of the chicken you mention using sumac, but I don't see that listed among the ingredients. Also, do you marinate the chicken in the spices and oil? If so, do you have to use more when you cook the chicken?

Sorry if that's a bit of a dumb question, I'm a bit new to cooking but wanting to try to be healthier!
